Barchette di melanzane con quinoa e verdure

Ingredienti
4 melanzane viola grandi
1 peperone giallo
1 peperone rosso
5 pomodori da salsa
1 zucchina
1 cipollotto
250 g di quinoa
Olio extravergine d’oliva
Sale e pepe
Preparazione
1. Sciacquate la quinoa sotto l’acqua corrente e cuocetela nel
doppio della sua acqua per 20 minuti.
2. Nel frattempo tagliate una fetta spessa dalla parte superiore
di ciascuna melanzana nel verso della lunghezza. Svuotatele parzialmente dalla polpa.
Tagliate questa e la fetta a cubetti.
3. Mondate le altre verdure tagliate a cubetti. Fatele saltare
insieme alla melanzana in una padella con l’olio. Regolate di
sale e pepe e cuocete per 4-5 minuti, mescolando spesso, poi
unite le verdure alla quinoa e regolate di sale se necessario.
4. Ungete e salate leggermente l’interno delle melanzane e versatevi la quinoa con le verdure.
5. Disponete le melanzane ripiene in una teglia unta con un po’ d’acqua sul fondo e cuoceteli in forno a 180° per 30-35 minuti, coprendo con un foglio di alluminio i primi 20 minuti.
Servite le barchette tiepide o fredde.
