Ingredienti per 6 persone:
- 1,2 Kg di branzino
- 2 rametti di timo
- Burro
- Vino bianco secco
- 1 limone non trattato
Per accompagnare:
- 12 pomodorini
- 80 g di pangrattato
- 3 acciughe sott’olio
- 1 cucchiaino di capperi
- 1 rametto di prezzemolo
- 20 g di frutta candita a dadini
- Olio extravergine d’oliva
Preparazione
- Lavorate 50 g di burro ammorbidito con le foglie di timo, spezzettate la buccia grattugiata di mezzo limone. Eviscerate il branzino e sciacquatelo.
- Salate l’interno del pesce e introducete un rametto di timo. Praticare dei tagli diagonali sul dorso e inseritevi 2/3 del burro aromatizzato. Trasferitelo in una teglia unta d’olio e burro.
- Infornate la preparazione a 180° per 25/30 minuti, irrorando la superficie a metà cottura con il vino, che lascerete evaporare. Salate.
- Lavate intanto i pomodorini, asportate la calotta superiore e svuotateli con un cucchiaino, tenendo la calotta da parte. Eliminate i semi e l’acqua, salateli e capovolgeteli sul tagliere.
- Fate sciogliere a fuoco dolce le acciughe, scolatele con un filo d’olio e la polpa dei pomodori. Unite il prezzemolo tritato e i capperi.
- Togliete dal fuoco, lasciate intiepidire e amalgamate il composto, la scorza grattugiata del limone rimasta e la frutta candita. Mescolate e salate.
- Riempite con il composto i pomodorini, trasferitelo in una teglia con 20 ml di olio e infornate per circa 15 minuti, sfornate il branzino e trasferitelo su un largo piatto da portata.
- Circondate il pesce con i pomodorini preparati. Sistemate qualche fogliolina di timo a copertura dell’occhio del pesce oppure della scorza di limone tagliato a stelle e servite.
