Ingredienti per 4-5 persone:
- 8 carciofi non molto grossi
- 1 limone
- 100 g di prosciutto cotto
- 2 fette di formaggio Emmentaler
- 1 tuorlo d’uovo
- 4 cucchiai di parmigiano grattugiato
- 2 cucchiai di olio
- Prezzemolo tritato
- Sale e pepe
Per la cottura
- 1 bicchiere di acqua
- 2 cucchiai di olio
- 1/2 cubetto di dado
Tempo di cottura: 20 minuti
Preparazione
Private i carciofi dei gambi, delle spine e delle foglie grosse e metteteli in acqua acidulata con limone.
Preparate il ripieno:
Tritate il prosciutto con le fette di formaggio poi mescolatevi il tuorlo, il parmigiano grattugiato, l’olio, il prezzemolo tritato, sale
e pepe. Suddividetelo nei carciofi allargati che disporrete richiusi e ritti, nella pentola a pressione.
Versate l’acqua, l’olio e unite il dado. Chiudete la pentola, all’inizio del sibilo abbassate la fiamma e calcolate 20 minuti di cottura. Se il sugo fosse troppo abbondante, lasciatelo addensare a fuoco vivo a pentola scoperta.
