Fregola vongole e bottarga
La fregola vongole e bottarga è un piatto tipico della Sardegna. La fregola è una semola tipica di questa regione, viene tostata al forno dopo la lavorazione a mano e per tale motivo si presenta sotto forma di palline secche croccanti. Si può acquistare nei supermercati. La bottarga è ricavata dall’essiccazione e dalla salatura di uova di muggine o di tonno. E’ molto ricercata e viene considerata il caviale del Mediterraneo. La fregola vongole e bottarga è un piatto unico e l’unione perfetta di questi ingredienti lo rende irresistibile!!
Ingredienti per 4 persone
- Pasta fregola g: 400
- Vongole 1 kg
- Vino bianco g: 80
- 1 spicchio di aglio
- Bottarga di muggine g: 100
- Prezzemolo
- Olio extravergine di oliva
- Sale
Preparazione fregola vongole e bottarga
- Mettete a bagno le vongole in acqua e sale per un’ora.
- In un tegame con l’olio soffriggete l’aglio, disponete le vongole scolate e sciacquate, bagnate con il vino, coprite, cuocete, fino a quando le valve saranno aperte, sgocciolate le vongole, eliminate le valve e recuperate i molluschi.
- Cuocete la fregola in acqua salata, scolatela, disponetela in un tegame con l’olio, unite i molluschi, lasciate insaporire sul fuoco per qualche minuto e servite nel piatto da portare con la bottarga grattugiata e il prezzemolo tritato.
