limoncello fatto in casa

La preparazione del limoncello richiede limoni assolutamente biologici, non trattati e soprattutto freschi, possibilmente di primo raccolto.

Per 15 persone
Tempo di preparazione: 60 minuti + macerazione
Ingredienti
700 ml diacqua
500 ml dialcool 95 °
500 g (circa 6 dilimoni)non trattati
600 g dizucchero
Procedimento
1)Lavareaccuratamente i limoni biologici, asciugarli con un panno pulito: sbucciare i limoni con uno sbucciaverdure avendo cura di non rimuovere la parte bianca perché darebbe al liquore un sapore amaro.
2)Tagliarela scorza a piccoli pezzi, preferibilmente usando un coltello in ceramica, (la ceramica preserva i principi attivi contenuti nella scorza del limone).
3)Trascorse3 settimane ( i tempi di macerazione sono variabili, alcuni esperimenti riducono notevolmente il tempo di macerazione riducendolo anche a 3 giorni), procedere con la preparazione dello sciroppo.
4)Portarel’acqua a ebollizione e sciogliere lo zucchero.
Lasciare completamente raffreddare.
5)Unirelo sciroppo, all’alcol e alle scorze di limone.
6) Lasciare macerare per altri 3-4 giorni.
7)Filtrareil liquore dalle scorze di limone, che nel frattempo avranno ceduto la maggior parte dei principi attivi, imbottigliare e servire ghiacciato.
Il limoncello può essere anche conservato in congelatore in quanto lo zucchero e l’alcol contenuti non permettono il congelamento.
