Ingredienti per 6 persone
- 1 pollo di circa kg 1,250
- 50 g di burro
- 1 rametto di rosmarino
- 1/2 bicchiere di vino bianco secco
- 1/2 bicchiere di acqua o di brodo di dado
- Sale e pepe
Per il ripieno
- 150 g di carne cotta
- 50 g di salame o di prosciutto crudo
- 1 pugno di mollica di pane bagnata nel latte e strizzata
- 1 uovo intero
- 1 cucchiaio di prezzemolo tritato
- 2 cucchiai rasi di pangrattato
- 4 cucchiai di parmigiano grattugiato
- Sale pepe
- Noce moscata
Preparazione

Preparate il pollo per la cottura e asciugatelo bene.
Fate il ripieno: in una terrina mescolate la carne, il salame e la mollica di pane, passati nel tritatutto, l’uovo, il prezzemolo, il pangrattato, il parmigiano, sale e pepe noce moscata. Introducete il composto bene amalgamato nel pollo, cucitene l’apertura, poi legatelo.
Fatelo rosolare nel burro con il rosmarino, salatelo, pepatelo, versate il vino bianco e quando questo si sarà evaporato, aggiungete l’acqua. Chiudete la pentola a pressione, all’inizio del sibilo abbassate la fiamma e calcolate 35 minuti di cottura. Se il sugo fosse abbondante, lasciatelo asciugare a pentola scoperta e a fuoco vivo. A piacere servite il pollo con patate che avrete unito al pollo negli ultimi 8 minuti di cottura.
