Polpette di tofu e spinaci
Le polpette di tufu e spinaci sono una ricetta vegana molto facile da preparare, si sostituisce la carne con il tofu, un prodotto con tante proteine e pochi grassi.
Tofu
Il tofu detto anche formaggio vegetale è un alimento molto presente nell’ambito della diete vegetariane e vegane e si ottiene dalla cagliatura del latte di soia. Si può acquistare sotto forma di panetto oppure nella forma vellutata che è molto delicata e ha un gusto neutro. Il tofu può essere utilizzato in molte ricette dalle insalate ai dolci. Può essere utilizzato per dare consistenza a zuppe e vellutate. Il tofu è ricco di proteine ma povero di grassi.
Spinaci
Gli spinaci sono ricchi di vitamine e sali minerali come:magnesio, potassio, fosforo,rame e calcio. Contengonoferro, anche se non esattamente nella quantità immaginata da Braccio di Ferro, in realtà la quantità è minore e non viene facilmente assimilata dall’organismo. E’ bene accompagnare o condire gli spinaci con limone che favorisce l’assorbimento. Gli spinaci si prestano a numerose ricette e preparati in cucina e grazie alla versatilità possono dare luogo a ricette gustosissime.
Ingredienti per 4 persone
- Tofug: 300
- Spinacig: 200
- Besciamella di soiag: 200
- Zenzerog: 30
- Sale e pepe
Preparazione delle polpette di tofu e spinaci
- Lavate gli spinaci, scottatateli in acqua salata, scolateli e strizzateli.
- In una ciotola amalgamate il tofu sbriciolato con gli spinaci tagliuzzati e lo zenzero grattugiato, fino ad ottenere un composto omogeneo, salate e pepate.
- Con le mani umide confezionate le polpette, adagiatele in una pirofila, versate la besciamella di soia e cuocete in forno a 180° per 15 minuti.
