Polpettone in crosta con uova

Per 4-6 persone
Ingredienti
- 1 rotolo di pasta brisée
- 600 g di carne macinata
- 100 g di mortadella
- 200 g di pane raffermo
- 100 g di parmigiano
- 100 g di pecorino
- 7 uova
- 1 spicchio d’aglio
- Prezzemolo
- Noce moscata
- 1 cucchiaio di latte
- Sale e pepe
Preparazione
1.Rassodate le 4 uova per 7 minuti.
2.Tritate in un robot da cucina il pane raffermo con la mortadella tagliata a cubetti, poi trasferite il trito in una ciotola.
3.Unite la carne macinata, il prezzemolo e l’aglio tritati, il parmigiano e il pecorino grattugiati, due uova e impastate il polpettone con le mani fino a quando avrete ottenuto un composto omogeneo, regolando di sale e pepe.
4. Rivestite uno stampo da plumcake con la carta forno. Poi foderatelo con la pasta brisée lasciando che l’eccedenza sporga sui lati.
5. Mettete sul fondo della pasta uno strato di composto di carne macinata, poi le quattro uova sode sgusciate intere e coprire di nuovo con il composto di carne macinata. Ripiegate la pasta brisèe sopra la carne per coprirla, tagliate le eccedenze e sigillate i bordi. Spennellate la superficie con l’uovo rimasto sbattuto e con il latte e infornate a 160 gradi per un’ora.
6. Sfornate il polpettone, toglietelo dallo stampo aiutandovi con la carta forno, fatelo intiepidire e poi servitelo affettato.
Se volete….
Con gli avanzi di pasta brisè potete decorare la superficie del polpettone, per esempio creando dei fiori e delle foglie, da fare aderire dopo averla spennellata con l’uovo.
