Il risotto ai carciofi è un primo piatto molto gustoso e da preparare velocemente. Dovrà essere utilizzata la parte tenera del carciofo, ortaggio con tante proprietà importanti per il nostro organismo. Ecco la ricetta del risotto ai carciofi.
Ingredienti per 4 persone:
- 400 g di riso
- 5-6carciofi freschi
- 2 spicchi diaglio
- 1cipolla
- 4 cucchiai diolio extravergine di oliva
- 1/2 bicchiere divino bianco
- 1 l dibrodo vegetale
- Una presa diprezzemolo tritato
- Parmigianograttugiato
- Sale e pepe
Procedimento risotto ai carciofi
- Preparate il soffritto con l’olio, l’aglio, la cipolla, il prezzemolo e le parti più tenere dei carciofi tritati sottilmente con l’aggiunta di un goccino di acqua.
- Lasciate cuocere lentamente. A cottura quasi ultimata unite il vino e fate sfumare. Aggiungete quindi il riso e portatelo a cottura, allungando poco alla volta con il brodo vegetale.
- Regolate di sale e pepe. Alla fine amalgamate bene con il parmigiano e servite caldo.

I carciofi (Cynaria scolymus) erano molto noti già presso i Greci, che li chiamavano kinara, e i Romani, che invece li chiamavano cynara.
