Rotolo al caffè
Ilrotolo al caffèè un soffice dolce ideale per concedersi una pausa dolce a colazione, a fine pasto oppure in un momento in cui volete concedervi un piccolo peccato di gola. Una pasta biscotto farcita con crema aromatizzata al caffè rendono il rotolo al caffè un dolce irresistibile!!
Preparazione 25′ // Cottura 15’// Riposo 2h
Ingredienti per 6 persone
Per la pasta biscuits:
- 3 uova a temperatura ambiente
- 50 g difarina 00
- 90 g dizucchero semolato
- 1/2bacca di vaniglia
Per la farcitura:
- 2 tuorli
- 120 g dimascarpone
- 50 ml dipanna fresca montata
- 2 cucchiai dizucchero
- 1 cucchiaio dimaizena
- 250 ml dilatte
- 2 cucchiaini da tè dicaffè solubile
- 1 foglietto digelatina di pesce
Per decorare:
- Zucchero a velo
Preparazione
Iniziate dalla base del dolce:
- separate i tuorli dagli albumi. Montate prima i bianchi a neve ferma con 45 g di zucchero, poi i rossi con lo zucchero rimanente.
- Unite al composto i tuorli, i semi della bacca di vaniglia e poi le chiare senza smontarle. Setacciate e incorporate gradualmente la farina e trasferite il tutto su una placca da forno coperta di carta e livellate. Dovete ottenere un rettangolo dello spessore di 1 cm.
- Infornate a 220° per circa 7 minuti, senza aprire mai lo sportello. Sfornate coprire con della stagnola per far trattenere umidità che aiuterà ad arrotolare la pasta.
Per la farcitura:
- preparate la crema pasticcera montando i tuorli con lo zucchero, unite la maizena e gradualmente il latte.
- Trasferite sul fornello e mescolate fino a che la crema sarà densa. Prima di togliere dal fuoco sciogliete nella crema il caffè solubile. Lasciate raffreddare completamente la crema, poi con una spatola amalgamate il mascarpone, la gelatina ammollata nell’acqua e sciolta in un cucchiaio di panna tiepida e la panna montata.
- Farcite la base, arrotolate il dolce aiutandovi con la carta stagnola e trasferitela in frigo avvolto nella stessa carta. Poco prima di servire togliete dal frigo e cospargete il rotolo con zucchero a velo.
