Gli spaghetti alla carbonara light sono una variante alla famosa pasta romana,
Ingredienti per 2 porzioni di spaghetti alla carbonara light:
- 200 g dipiselli
- Un cucchiaio dimandorle a scaglie
- Uno spicchio d'aglio
- 15 g dibasilico
- 15 g diformaggiotipo Parmigiano
- Mezzolimone
- 150 g dispaghetti
- Una fetta dipancetta affumicata
- Un cucchiaino diolio
- 1uovo
- 100 g diyogurt bianco magro
- Pepe
Preparazionedi spaghetti alla carbonara light
1.Portate a ebollizionel'acqua per la pasta, immergetevi per 30 secondi un colino con i piselli e metteteli da parte.
2. Tostate le mandorlee frullatele, aggiungete aglio, sale, basilico, parmigiano, succo di limone e frullate; unite i piselli e azionate il robot per sminuzzarli. Nel frattempo cuocete la pasta. Intanto rosolate la pancetta nell'olio, spolveratela con pepe e trasferitela su un foglio di carta da cucina; versate nel grasso rimasto un quarto di composto di piselli.
3.Sbattete uovo e yogurt. Scolate la pasta, versatela in padella con i piselli e toglietela dal fuoco, unite una miscela di uovo con un po' di acqua di cottura della pasta. Completate con il composto di piselli rimasti e la pancetta.
Per un italiano è un motivo di culto, per gli stranieri una ricetta misteriosa, spesso “maltrattata” con ingredienti che non hanno nulla a che vedere con la sua ricetta originale: stiamo parlando della pasta alla carbonara, uno dei piatti più famosi in Italia e all’estero.
