I tagliolini alla crema di fave sono un piatto molto genuino della tradizione contadina. I tagliolini fatti a mano ci fanno fare un salto nel passato, quando le nonne o le mamme preparavano per i giorni di festa questa buonissima pasta all’uovo. La sfoglia tirata con il matterello racchiude la tradizione delle cose belle e genuine. Ingredienti per 6 persone:
- 300 g di farina 00
- Semola di grano duro
- 3 uova
- Olio extravergine d’oliva
- Sale
Per la crema:
- 300 g di fave fresche sgusciate
- 2 scalogni
- 1/2 spicchio di aglio
- 40 g di mandorle
- 50 g di pecorino grattugiato
- Olio extravergine d’oliva
- 1 ciuffo di menta
- Sale
- Pepe
Preparazione tagliolini alla crema di fave
- Setacciate la farina sul piano da lavoro, formate la fontana e versatevi al centro le uova, poco sale e un filo d’olio. Lavorate il tutto con energia.
- Formate una palla, copritela e fatela riposare per 20 minuti. Stendete quindi la pasta e ricavatene tagliolini. Cospargeteli con poca semola lasciali e fateli asciugare coperti da un telo. Tirate la pasta a mano con il mattarello, arrotolatela su se stessa e, poi, con un coltello molto affilato, tagliatela a striscioline sottili.
- Scottate le fave in acqua poco salata in ebollizione per 3 minuti, scolatele e sbucciatele. Sbucciate e tritate lo scalogno.
- Scaldate 3 cucchiai di olio in una padella, unitevi lo scalogno e le fave. Salate e cuocete per 4 minuti, unendo poca acqua calda.
- Frullate metà delle fave con il pecorino grattugiato, in mezzo spicchio di aglio sbucciato, qualche foglia di menta, le mandorle e 50 ml di olio extravergine, fino ad ottenere una crema omogenea.
- Cuocete la pasta al dente in abbondante acqua salata, scolatela e trasferitela umida nella padella con le fave intere, versate poca crema e mescolate.
- Servite nei piatti sul letto di crema allungata con poca acqua di cottura della pasta. Completate con pepe macinato, qualche foglia di menta fresca e servite.
