Ziti spezzati al ragù

Gli ziti spezzati al ragù sono un primo piatto tipico della cucina napoletana. La cottura del ragù, che deve essere lenta e lunga è una bontà unica. In questa ricetta il ragù viene preparato aggiungendo anche le braciole. Ottimo primo piatto della domenica!!

Ingredienti:
- 400 g diziti
- 100 g dipancetta
- 300 g dicostine di maiale
- 600 g dimanzoin un unico pezzo
- 300 g dibraciole
- 2cipolle
- 50 g diburro
- 100 ml di vino rosso
- 5 cucchiai diolio EVO
- 1 l dipassata di pomodoro
- Basilico
- Sale
Preparazione ziti spezzati al ragù
- In un tegame con olio, burro e pancetta fate appassire la cipolla.
- Unite e il manzo e fatelo rosolare da tutti i lati, poi aggiungete le braciole e le costine.
- Sfumate la carne con il vino e, quando sarà evaporato aggiungete la salsa di pomodoro, salate e cuocete per un’ora. Togliete le costine quando saranno cotte per evitare che si sfaldino.
- Cuocete il ragù per circa 3 ore a fuoco basso e con il coperchio.
- Cuocete gli ziti spezzati in acqua abbondante e salata.
- Condite gli ziti con il ragù e serviteli.
