Strudel alla carne con i pisellini

Ingredienti per 6 persone:
• 380 g di pasta per pizza fresca già stesa in un rettangolo
• 400 g di magro di vitello e di maiale tritato
• 100 g di prosciutto di spalla a dadini
• 100 g di pisellini surgelati
• 1 cipolla
• 3 cucchiai di olio extravergine di oliva
• 1 uovo e un tuorlo
• Parmigiano grattugiato
• Mezzo bicchiere di vino bianco secco
• 1 rametto di rosmarino
• Sale pepe
Preparazione
1 ) Sbucciate, lavate e tritate la cipolla poi fatela rosolare nell’olio per pochi minuti, mescolando a fiamma bassa. Unite le carni tritate e fateli insaporire a fiamma media, mescolando.
2) Salate, pepate, unite pisellini ancora surgelati e bagnate con mezzo bicchiere di vino. Mettete il coperchio e fate cuocere, a fiamma bassa, per 20 minuti mescolando spesso.
3) Nel frattempo, riscaldate il forno a 180°. Togliete il rettangolo
di pasta dalla sua confezione. Sistematelo fra due fogli di carta da forno e appiattitelo il più possibile con il matterello.
4) Togliete le carni dal fuoco e versatele in una ciotola. Fatele raffreddare e incorporatevi 3-4 cucchiai di parmigiano, l’uovo sgusciato e i dadini di spalla di prosciutto.
5) Mescolate bene il tutto e trasferite il composto sul rettangolo
di pasta appiattito. Arrotolatelo, aiutandovi con la carta sottostante.
6) Sigillate bene le estremità del rotolo, spennellando la parte superiore della pasta con il tuorlo, mescolato con poco olio in una ciotolina.
7) Formate dei tagli obliqui e paralleli con la punta di un coltello, sulla superficie dello strudel. Spolverizzate con qualche foglia di rosmarino sminuzzata.
Infornate per 40 minuti.
Consiglio per la pasta pane…
Il tempo di lievitazione della pasta da pane dipende dalla temperatura ambientale, che dovrebbe aggirarsi 22°e i 27° gradi
e dalla quantità di lievito. Per una pizza casalinga si utilizza di solito il 5% della farina , ma potrete dimezzarlo se aumentate i tempi di lievitazione.
Potete preparare la pasta il giorno prima lasciandola maturare in frigo a 23 gradi, prima di fare lievitare in un luogo tiepido sarà più leggera.
