Pappardelle al salmone e crema di porri

Ingredienti per 6 persone
500 g dipappardelle fresche
200 g disalmone affumicato
80 g diprovola affumicata grattugiata
2porri
2 ciuffi difinocchietto fresco
40 g diburro salato
Sale e pepe neroin grani
Preparazione
1. Eliminate le foglie più dure esterne e le radici ai porri.
Sfogliateli e lavateli accuratamente. Asciugateli con un telo da cucina. Tagliateli a tocchetti, cuoceteli al vapore 20 minuti.
2. Sciacquate e asciugate il finocchietto e tagliuzzatelo
con le forbici. Togliete dal fuoco i porri. Scolateli su un telo, tamponate le foglie delicatamente. Trasferitele nel bicchiere di un frullatore unendovi metà delle foglioline di finocchietto.
3. Aggiungete il burro salato e un’abbondante macinata di pepe nero. Frullate a più riprese, fino a ottenere una crema liscia e omogenea.
4. Versate la crema di porri in una larga padella antiaderente. Tagliate a listarelle il salmone affumicato.
5. Portate a bollore in una pentola 3 litri di acqua con
il sale grosso. Fate cuocere le pappardelle nell’acqua bollente per il tempo indicato sulla confezione, poi scolatele, trasferite nella crema di porri e fatela insaporire qualche secondo a fiamma moderata, mescolando.
6. Spolverizzate infine la pasta con la provola affumicata. Amalgamate, unite il salmone affumicato e il finocchietto
rimasto. Servire subito.
