Rotolo di patate di farcito

Ingredienti:
1 kg dipatate
1uovo
80 g diparmigiano grattugiato
Sale
Noce moscataq b
20 g diburro
50 g dipecorino grattugiato
Per la farcitura:
100 g discamorza a fette o mozzarella
100 g prosciutto cotto
Preparazione
1. Bollire le patate con la buccia in abbondante acqua salata, quando saranno cotte scolarle e sbucciarle, passarle al passapatate.
Condire con i formaggi grattugiati, la noce moscata il burro ed il sale. Impastare e solo ad impasto intiepidito aggiungere l’uovo, per evitare che si cuocia con il calore delle patate.
Una volta formato l’impasto stenderlo tra due fogli di carta
forno ben unti, e dare una forma rettangolare, poi farcire con la scamorza a fettine e con il prosciutto cotto.
2. Per richiudere il rotolo di patate farcito aiutarsi con il foglio di carta forno, arrotolando poco alla volta ed avendo cura che l’impasto non si rovini. Finito di arrotolare , sigillare bene i bordi con l’aiuto delle mani ben oliate, poi ungere il rotolo e cospargerlo di pangrattato. Infornare a 200° per circa 30 minuti (in alternativa è possibile anche friggere il rotolo, ma ovviamente risulterà meno leggero)
