La torta alle fragole è un dolce prelibato, preparato con fragole fresche, ricotta e panna. La torta alle fragole è preparata con una base dipasta frollae una crema di ricotta, fragole, colla di pesce e panna. Una variante della più famosa cheesecake che prevede i biscotti secchi e il burro.Vi consiglio di preparare questa gustosa torta alle fragole perché è una vera bontà.
Ingredienti per 6 persone
Per la pasta frolla:
- Farinag: 300
- Zuccherog: 120
- Burrog: 180
- 3 tuorli diuova
- 1bustinadivanillina
- Scorza di limonegrattugiata g: 30
Per la farcitura
- Ricottag: 300
- Fogli dicolla di pesceg: 20
- Pannaun decilitro
- Zucchero a velovanigliato g: 60
- Zuccherog: 100
- Fragoleg: 200
PREPARAZIONE PASTA FROLLA
- Impastatetutti gli ingredienti, fino ad ottenere un impasto omogeneo, avvolgetelo nella pellicola trasparente e conservatelo in frigorifero per 30 minuti. Rivestite una tortiera a cerniera con la carta da forno, foderatela con la pasta frolla stesa in una foglia sottile e infornate a 180° per 30 minuti.
PREPARAZIONE FARCITURA
- Mettetea bagno in acqua tiepida i fogli di colla di pesce, sgocciolateli, strizzateli e scioglietene metà in un tegame con la panna.
- In una ciotolamescolate la ricotta con lo zucchero a velo, incorporate la panna, versate il composto sulla pasta frolla, formando uno strato di 2 cm, e conservate in frigorifero per un’ora.
- In un tegame lasciate caramellare lo zucchero con 30 millilitri di acqua, unite i fogli di colla di pesce rimasti, fateli sciogliere, unite le fragole frullate e lasciate addensare sul fuoco.
- Togliete la tortiera del frigorifero, coprite con il composto di fragole raffreddato a 10 gradi e conservate in frigorifero per un’altra ora.
