Buona norma è consumare l’uovo 3-4 volte a settimana se non si hanno problemi, scendendo a 1-2 nel caso di colesterolemia elevata.
Calorie
Contengono poche calorie: un uovo contiene circa 80 calorie; inoltre anche in piccole quantità questo alimento garantisce un’elevata sensazione di sazietà. In caso di una dieta ipocalorica l’ideale è prepararle alla coque, sode o in camicia.
Posso essere dannose per il fegato?
Le uova contribuiscono all’ apporto disostanze che aiutano la funzionalità epatica.Tali sostanze sono lacolinae lametionina, due amminoacidi che stimolando la secrezione della bile, aiutano a prevenire lasteatosi, cioè l’accumulo di grassi nel fegato che, qualora venga trascurato, può portare acirrosie insufficienza epatica cronica.
Digeribilità
La digeribilità dell’uovo è proporzionale al quantitativo di grassi impiegati ed aumenta se i condimenti vengono portati ad alte temperature, come accade nel caso delle uova fritte. Studi recenti hanno confermato che un consumo moderato non è associato ad un aumentato rischio di malattie (o morte) cardiovascolari, fatta eccezione per i soggetti affetti dadiabete.
Le uova nella dieta del bambino
Le proteine dell’uovo sono complesse e, se giungono nell’intestino del bimbo quando questo organo non è ancora in grado di riconoscerle, possono provocare allergie.Vanno date solo al compimento del primo anno.
