Ingredienti per 6 persone:
Per la pasta:
- 300 g di farina
- 50 g di burro
- 2 cucchiai di olio
- 1 cucchiaino di lievito in polvere
- Sale
Per il ripieno:
- 500 di spinaci
- 300 g di ricotta
- 2 fette di pancetta grassa
- Mezzo litro di latte
- 50 g di parmigiano
- 50 g di farina
- 30 g di burro
- 1 uovo
- Noce moscata
- Sale
Preparazione
Preparate la pasta:
- Versate la farina sulla spianatoia, fate al centro la conca, mettete il burro a pezzettini, l’olio, lievito, un pizzico di sale e impastate unendo l’acqua necessaria per ottenere una pasta piuttosto soda; avvolgetela nella pellicola e lasciatela riposare.
Preparate il ripieno:
- Mondate gli spinaci, lavateli ripetutamente in acqua corrente, sgocciolatele in una pentola e cuoceteli bene; tritateli finemente e metteteli in una terrina.
- Fate fondere il burro In una casseruola, incorporatevi la farina, stemperando bene i grumi con un cucchiaio di legno e diluite con il latte caldo, aggiunto a poco a poco sempre mescolando. Salate e cuocete la besciamella per qualche minuto.
- Unite agli spinaci la besciamella, il parmigiano, un pizzico di sale, la ricotta, il tuorlo dell’uovo e l’albume montato a neve ben ferma. Mescolate delicatamente insaporite con una grattugiata di noce moscata.
- Dividete la pasta in due parti (rispettivamente due terzi e un terzo); spianate con il mattarello la parte più grossa della pasta e foderate con questa il fondo e i bordi di una teglia leggermente imburrata e infarinata. Versate nell’interno della teglia il ripieno di spinaci.
- Prendete anche l’altro pezzo di pasta sfoglia del diametro della teglia, adagiatelo sul ripieno e ripiegate i bordi della pasta sottostante verso l’interno, pizzicate gli angoli tutti intorno con la forchetta. Punzecchiate la superficie della pasta con una forchetta e cospargetela con quadrettini di pancetta.
- Cuocete la crostata in forno a fuoco moderato per circa un’ora.
