Insalata con topinambur e mele
L’insalata con topinambur e mele è un piatto unico e nutriente.
Le mele rallentano l’assorbimento degli zuccheri e dei grassi
grazie alle fibre solubili (soprattutto la pectina), che mantengono bassi i livelli di glicemia nel sangue. Il consumo di mele è per questo particolarmente indicato per chi soffre di diabete. Sempre grazie alle fibre, questi frutti regolano l’appetito e, durante la giornata, sono uno spuntino ideale per calmare la fame, soprattutto quella nervosa, e per stimolare una corretta funzione intestinale .
Il topinambur è un alimento dalle innumerevoli proprietà grazie ai nutrenti in esso contenuti.
In via preliminare possiamo affermare che questo tubero è perfetto da utilizzare come disintossicante: favorisce le funzioni digestive, combatte la stitichezza e, contemporaneamente, riduce i livelli di zucchero nel sangue.
L’insalata con topinambur e mele è di facile preparazione ma ricca di proprietà fondamentali per la nostra salute.
Mele: fonte di vitamine e di sali minerali
Ingredienti per 4 persone:
- 400 g ditopinambur
- 400 g dimele
- 1 costola disedanobianco
- Succo dilimone
- Senape
- 1 cucchiaio dicapperi
- Olio EVO
- Sale e pepe
Preparazione
- Predisporreil condimento in un’ ampolla o in una tazza, mescolando succo di limone, una presa di sale, alcuni capperi tagliuzzati, olio evo e un cucchiaino di senape. Agitare per avere un’emulsione.
- Tagliarea fette molto sottili le mele sbucciate, i topinambur puliti e sbucciati e la costola di sedano bianco.
- Sistemareil tutto in una terrina e condire con il preparato. Pepe a piacere.
