La ricetta di Scaloppe di trota alle mandorle è un piatto di facile preparazione e contiene ingredienti con importanti proprietà nutrizionali come la trota e le mandorle.
La trota salmonata deve essere caratteristiche carni rosate grazie a un’alimentazione particolarmente ricca di carotenoidi, sostanze antiossidanti presenti nei crostacei, nel plancton nelle alghe. Ricetta Scaloppe di trota alle mandorle
Ingredienti per 4 persone:
- 500 g di filetti ditrota salmonata
- 2uova
- 50 g disemola
- 80 g dimandorlecon la buccia
- 1 cespo dipuntarelle
- 1 cuore disedano bianco
Preparazione
- Tritatele mandorle in modo grossolano e mescolate con la semola. Eliminate eventuali lische nei filetti con una pinzetta, tagliateli a trancetti, passateli nelle uova sbattute con un po’ di sale, poi nel mix di semola e mandorle e lasciate riposare mezz’ora in frigo.
- Pulitele puntarelle e il sedano, tagliateli a julienne e mettetele a bagno in acqua e ghiaccio.
- Rosolatei trancetti di trota in 3-4 cucchiai d’olio, 2 minuti per lato; scolateli su carta da cucina e serviteli con le verdure scolate, asciugate e condite con sale e un filo d’olio.
