Torta di castagne
La torta di castagne è un dolce tipico dell’autunno. Ha un gusto morbido e speciale. Le castagne sono ricche in fibre minerali e acido folico, ottime in caso di stanchezza e anemia. Contengono potassio, fosforo, zolfo e sodio. E’ stata fonte di sostentamento per generazioni, tant’è che il l’albero delle castagne veniva chiamato “albero del pane”.
Vi propongo questa buonissima torta di castagne caramellate.
Ingredienti per 6 persone:
- Farina di castagne: g 200
- Fecola di patate: g100
- Zucchero di canna: g 300
- Bevanda vegetale a base di soia: 1 litro
- 2 banane
- Cremor tartaro: g 5
- Bicarbonato
- Gocce di cioccolato: g 60 20
- Castagne
- Granelli di mandorle
- Olio di semi di girasole
Preparazione torta di castagne
Frullate le banane con la bevanda vegetale a base di soia e 90 millilitri di olio di semi.
In una ciotola mescolate la farina di castagne e la fecola di patate con 100 g di zucchero di canna, il cremor tartaro e un pizzico di bicarbonato, unite il composto di banane, le gocce di cioccolato e amalgamate.
In una tortiera infarinata versate l’impasto e infornate a 180° per 50 minuti.
Con un coltello incidete una croce sulle castagne, disponetele in una teglia e infornate a 220° per 20 minuti.
In un tegame portate a ebollizione mezzo litro di acqua, versate lo zucchero rimasto, continuate la cottura, rimestando con un cucchiaio di legno, fino a ottenere uno sciroppo, immergete le castagne sbucciate e lasciatele caramellare sul fuoco per qualche minuto.
Estraete la torta dal forno, Lasciatela intiepidire, sformatela e guarnitela con le castagne caramellate e la granella di mandorle.
