Ingredienti per 4 persone:
- 450 g di polpa di manzo tritata
- 150 g di prosciutto cotto
- 100 g di salsiccia
- 2 carote (100 g)
- Qualche foglia di sedano e di prezzemolo
- 2 uova intere
- 4 cucchiai di parmigiano grattugiato
- Sale e pepe
- Olio di oliva o burro
Per la cottura:
- 1 litro e un 1/4 di acqua fredda
- 1 carota
- 1 gambo di sedano
- i cubetto di dado
- 1 pizzico di sale
Preparazione
- Nel tritatutto passata il prosciutto, la carota, le foglie di sedano e il prezzemolo, poi mescolate il composto con la carne, la salsiccia sbriciolata, le uova, il parmigiano, il sale e il pepe.
- Quando l’impasto sarà ben amalgamato, formate un salame che avvolgerete in un telo o nella reticella, del quale legherete le due estremità, che dovranno essere molto corte per non otturare le valvole della pentola.
- Fatelo rosolare nella pentola con olio d’oliva o burro. Copritelo con l’acqua fredda, unite il cubetto di dado,il sedano, la carota e il sale.
- Chiudete la pentola, all’inizio del sibilo abbassate la fiamma e calcolate 30 minuti di cottura.
- Togliete il polpettone, lasciatelo raffreddare, levate il telo o la reticella,tagliatelo a fette che servirete con una buona insalata fresca oppure ricoperte di gelatina.
