- 500g di zucca, sbucciata e tagliata a cubetti
- 1 cipolla media, tritata
- 2 spicchi d’aglio, tritati
- 1 cucchiaio di zenzero fresco grattugiato
- 4 tazze di brodo vegetale
- 1/2 tazza di latte di cocco
- 1 cucchiaio di curcuma in polvere
- Sale e pepe q.b.
- Olio d’oliva
Tempo di preparazione: 10 minuti
Tempo di cottura: 25-30 minuti
- In una pentola grande, scalda un po’ di olio d’oliva a fuoco medio. Aggiungere la cipolla tritata e l’aglio e soffriggere per alcuni minuti, fino a quando diventano morbidi e traslucidi.
- Aggiungere la zucca a cubetti e lo zenzero grattugiato nella pentola. Cuoci per altri 5 minuti, mescolando di tanto in tanto per evitare che si attacchi alla pentola.
- Versare il brodo vegetale nella pentola e porta a ebollizione. Riduci quindi il fuoco e lascia cuocere a fuoco lento per circa 20-25 minuti, finché la zucca diventa morbida.
- Utilizzando un frullatore ad immersione o un frullatore tradizionale, frulla la zuppa fino a ottenere una consistenza liscia e vellutata.
- Aggiungere il latte di cocco e la curcuma in polvere alla zuppa. Mescola bene e assaggia per regolare il sale e il pepe secondo il tuo gusto.
- Rimetti la zuppa sulla fiamma per alcuni minuti, solo per farla scaldare nuovamente.
- Servi la zuppa di zucca e zenzero calda, guarnendo con un po’ di latte di cocco o semi di zucca tostati, se desideri.
